Grapes: 100% Cabernet Sauvignon
Winemaking:
A wine made from Cabernet Sauvignon grapes from our oldest Salas Altas vineyards. The Cabernet Sauvignon is fermented at a controlled temperature of 28 º C with stages at higher temperatures, to extract more colour and tannins from the grapes, for which we also apply "remontage" and "delestage" at the appropriate moments.
After the alcoholic fermentation, the wine macerated with the skins for two weeks for better extraction and colour stability. Following the bleeding of the must into the lower part of the tank, the malolactic fermentation was carried out before passing into barrels, 225 litre French Oak barrique's made from different forests and coopers.
The period of time in cask is twelve months to achieve a full integration of the grapes with oxygen through the timber.
